Buckwheat isn’t actually wheat, or any kind of a grain – it’s a gluten-free seed harvested from a relative of rhubarb. Finely milled, it makes a flour that’s rich in protein (containing all eight essential amino acids), dietary fibre, folate and trace minerals including copper, magnesium and manganese. You may be familiar with the prominent earthy/nutty flavour from Japanese soba noodles, and buckwheat flour also makes a nice addition to crepes, pancakes and pastries.
